I've heard positive things about the Adobe Flash Media Encoder. Or something along those lines. I'll do some more research into it and post a part 2 or an update for later. Unfortunately, I'm not sure if there's a one size fits all option for Macs. Camtwist is another solution I've heard from other users (Has cool stuff like fades, and different effects on the fly). I do have a Macbook as well, so I'll definitely try to tweak and play with the settings. There's lots of options out there. I'll do my best to narrow it down to one that's both easy and affordable.
