Ingredients:
- 2 cups water
- 2 cups sugar
- 2 tsp. cream of tartar
- 2 tbs. lemon juice
- 1 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg (optional)
- 2 tbs. butter
- 1/2 cup packed brown sugar
- 1/3 cup margarine, melted
- 2 sleeves of Ritz crackers (any plain, round butter snack Ritz-like cracker will do)
- 1 unbaked pie shell
Combine sugar, water, and cream of tartar, bring to a boil.
Add lemon juice, reduce to low heat for 15 minutes, then take off heat and let it cool for another 15. Pre-heat oven to 350 degrees.
Break 36 crackers into large pieces, placing in unbaked pie shell.
Add syrup once it's done cooling. Top with cinnamon, nutmeg, and dot with butter.
In a separate bowl, combine brown sugar, cinnamon, 25 crushed crackers and melted margarine.
Place crumbled topping on pie. Bake for 30-35 minutes, until crust is golden brown. Remember to place a cookie sheet under the pie tin to catch any spills if they occur.
Place on rack to cool. Serve with ice cream or whipped topping.
