Here's why:
Until you get to Zul Aman or freaking Black Temple, there is not a SINGLE good off-hand sword for a rogue in raiding. None. Nada. Zip. Zilch.
Clearly they expect you to use Latro's Shifting Sword until you get to ZA.
The swordsmith offhands, however, are excellent rogue offhands and will save you from having to PVP to raid.
The Hammersmith MH is nice, but there's similar options at most gear levels. Combat sword rogues are the vast majority of raiding rogues, and they need need NEED a fast offhand for Combat Potency.

Other than that, or if you like arenas, I'd suggest leatherworking. The drums are incredibly great (currently we've got 3 LWers in the physical DPS group in my raid usually, which means a 50% uptime on Drums of Battle. Yummy) and the Primalstrike Vest, Primalstrike Bracers, and Primalstrike Belt are exceptionally good gear.
I know the temptation is to go herb/alch to handle the consumable end, but trust me. If you're in it for the long run, go lvl an alt to 70 and make him mining/herb or something. Your guild has alchemists. Use them.

Yes, it used to take a whole evening to win. but it was a blast. Everyone had a role. All the quests mattered. It was crucial to get out your Cavalry and air support, then time your zerg with them.
Summoning your side's elemental was a risky but very rewarding propect.
Regarding your comments on mines, though: Mines can easily be soloed by a rogue in about 3 min. Stealth in, gank the single NPC that controls the node, and friendly NPCs spawn and do the rest of the work. I usually tag mine on the way through to Frostwolf.
Get exalted with Sporeggar {WoW}
Nov 4th 2007 7:39PM Very easy for me to solo farm Underbog for the hibiscus.
I put on my +stealth cloak and boots and got about 7-10 flowers per run. Hit it up twice a day, 5 resets each, and I was exalted in no time.
Didn't even need to burn my Vanish. Nothing up to the point when the nagas appear detects stealth, even the first boss.

Oct 23rd 2007 3:24PM Gee blizz, we raiders wouldn't have to arena for a piece or two if you're itemization didn't blow chunks.
Case in point: rogue weapons
Not a single frakking offhand DPS sword in any raid instance until Black Temple.
No fist weapons at all until The Eye.
No offhand daggers until Hyjal.
This is just stupid. ZA seems to be filling some of the gaps, but it's just bad design.
