I'm an officer in a Proudmoore meta-guild with over a thousand toons, so as a raid team leader, I am faced with oddly similar requirements and limitations. (Almost all of our members are social/100% casual, all are 18+ with most being mid-20s and up) However, there are a select few who have been around, who have raided in the past, and have that eagerness to keep it up, even though they're married, have regular jobs, kids, pets, other responsibilities. (I'm lucky though, since my husband is also on my raid team...)
It's SO rewarding to make sure you've got exactly what you mentioned: mature adults, with similar expectations. We don't yell, we come prepared, and we walk away weekly, happy.
You've got a LOT of respect from me, and certainly set a goal for others to achieve. Who said hardcore has to be life-consuming? ;)

As far as which would be the one I miss and wish were back: Opie_Outfitter. Probably not too many users for sure, but being able to add outfitter calls to a custom opie ring made switching a near-instant breeze, without any clutter.
Jan 27th 2012 1:12PM I love weapon enchants, but I think what's been forgotten are the simpler, stylish ones. Enchants like Power Torrent and Landslide are so bright and distracting, they're pretty horrible with or without transmog. Perhaps they could both offer the option to hide enchant effects, but encourage people not to bother by going back to more subtle, intriguing effects rather than the disco party ones of Cataclysm.
Nov 30th 2011 10:37AM What REALLY took me by surprise about the PvP gear for xmog was that I bought this set for honor points when they first announced xmog as an upcoming feature:
I bought it fair and square, can STILL currently equip them and walk around town, but they are not eligible for xmog. However, according to the blue post, EXACT copies of this gear that I _already_ own will be available from a vendor but with the label "Replica", and those should work. But... I already have the items. It's just a bit surprising.

Aug 29th 2011 10:08PM If Enchantrix (part of the Auctioneer Advanced suite) is still around, you can configure it to auto-disenchant all items by quality-level. (e.g. you can set it to all greens and blues in your bag, on your DE alt). Then, all you have to do is turn on auto-loot, and you have a one-click-per-item solution. It's not perfect, but it make it much faster and easier.
Aug 29th 2011 2:04PM I'm SO ready to rock with my Benediction in Anethema mode. However, I usually favor a MH/OH combo rather than a staff. What's a transmogger to do in these situations? ;) (I know the answer, but had to ask.)
Aug 25th 2011 12:57PM This is amazing! I always wished they would make the faire a bit more appealing to more people for more reasons. This would be the perfect place for them to put the DK starting armour set in, with the other armor pieces and replica sets they'll be offering. :D Great job Blizz!

I can't wait to see all the fantastic stuff and party in Booty Bay with everyone. (Floats, contests, laser dance parties...) It's certainly awesome. I highly encourage anyone and everyone (no matter your orientation) to come and join the festivities!
