Having class-specific quests and rewards was an awesome thing, and something that could be continued nowadays. Too bad Blizzard does not want it so, but well... I guess this is just up for personal preference.
It may be fun to tune up those quests to lvl80, along with the specific fights, and add some achievement. I'm sure people would do it even if they purchased their mount from the trainer on 60 (will be 40... soon surely coming to be 20... etcetc.) Also, famous epic items that required a quest chain, such as Quel'serrar and the hunter bow could be upgraded to 80, along with the kills they needed. (We need more decent looking gear, not made up of vyrkul or undead body parts for a change, anyway. ;) )

Most people nowadays do not have the chance to run the instances at their own level - it is very nearly impossible to get groups for anything below 70+ content. Either a heroic mode for old instances or a gear to nerf high level players to the appropriate level would be a lot of fun. It would also probably give a chance to new players (or alts) to experience that content. I am not sure how big a change it would be, but definitely smaller than putting in whole new content. The rewards wouldn't have to be items, just some special tokens, money, or something suchlike. Sounds like a small feature, and would mean a big value add for people who actually play for the atmosphere of the game instead of just loot/progress/huge crits. ;)

Seriously, Blizz should make the lowbie content more appealing (especially instances), instead of making people just run through it much more easily. They are created a nice and challenging game full of great zones, quests, and stories, and now they are pissing on it in a so-not-creative, let-the-noobs-have-it-easy way. Vanilla and TBC content has been irrelevant for a lot of players ever since wrath is out, and now they are becoming irrelevant for Blizz too. Not cool.
Not to mention that a mount used to be sort of a reward or achievement. (Not having 200 mounts, but having your first. Anyone recalls the feeling...?) Back in the days... I'm prolly just getting too old for this. ;) However, imo, this approach from Blizz to their own game just sucks.
