I think my play style is a lot like yours. There's a definite benefit to being methodical, especially in a game as huge as this one. I hate to randomly quest and burn time just for the hell of it.
Having said that, I like to focus on just the right quests all while gearing well and making sure I'm running up the right talents. A great guide I found is on http://wowgrinder.com/priest-leveling-guide/
There's a feeling to being unstoppable, especially when Priest leveling, that's just great: even if I intend to re-spec at max level.
