Actually cutting food into long thin strips is called julienning.
Frenching refers to trimming the meat off the shanks of chops. Pomme Frites were invented in Belgium and the most likely reason they are called french fries is because American soldiers nicknamed them that when they were introduced to them by the Belgian army whose official language was French.
